Las Jaras Steakhouse Cabernet Sauvignon

Region: Sonoma County, California

Varietal: 87% Cabernet Sauvignon, 13% Zinfandel

Soil Type: Gravelly Laughlin loam, Dry Creek Valley

Vinification: Destemmed and crushed, with fermentation bins sealed for eight days before spontaneous native fermentation. Daily punchdowns during active fermentation, followed by a 7-day extended maceration. Aged 26 months in 255-liter Bordeaux barrels, with native malolactic fermentation. Filtered but not fined.

Tasting Notes: Opens with sultry aromas of boysenberry, plum, and cocoa. On the palate: damson plum and black cherry layered with cocoa and violet, with a seamless mid-palate, refined tannins, and a long, supple finish.

Pairing: Grilled steaks, braised short ribs, lamb chops, and anything you’d order at a great steakhouse.

Farming: Organically farmed at Vinegrove Vineyard, Dry Creek Valley.
