Palazzone Brunello Di Montalcino
An assemblage from two distinct sectors of Montalcino: warmer southeastern parcels near Castelnuovo dell'Abate, which bring density and mouth-filling tannins, and cooler, higher-elevation sites around the town of Montalcino itself, which lift and brighten the whole. The result is a Brunello of remarkable balance and perfume.

Vinification: Harvested by hand with optical sorting on a vibrating selection table. Natural fermentation in 50 HL wooden barrels in a gravity-fed cellar. Aged 38 months in traditional large Slavonian botti.
Tasting Notes: Enchanting perfumes of juniper, cedar, pressed rose, and candied mint lead to a palate of juicy watermelon and strawberry. Finishes with an appetizing bitter herbal twist. Beautiful now, with another year in the bottle promising further cohesion.
Pairing: Bistecca alla Fiorentina, braised short ribs, wild boar ragù, aged pecorino, and roasted game.
