G.D. Vajra Clare J.C. Langhe Nebbiolo is a throwback to how Nebbiolo once tasted; lighter, energetic, and with a slight effervescence. Crafted as a homage to a 1606 recipe recorded by Gian Battista Croce, jeweler to the House of Savoy, this 100% Nebbiolo originates from younger organic parcels in the Langhe and is made using the ancestral method. Spontaneous fermentation occurs with roughly one-fifth whole clusters and an early racking to finish off the skins in stainless steel. The result is a nuanced, almost-frizzante texture and a delicate off-dry fleshiness. In the glass it pours a transparent, bright ruby, with a nose of raspberry, rosehip, wild berries, and sweet spice layered over a flinty undercurrent. The palate delivers a crisp, juicy rush with notes of wild strawberries, white pepper, and citrus peel leading into silky tannins and a playful lift from the carbonation. Vibrant, refreshing, and endlessly versatile; this is Nebbiolo reimagined for modern drinkers with a Renaissance period twist. Especially delightful when chilled slightly and served alongside grilled sausages, charcuterie, or spicy appetizers.
