Sangiacomo Vin Gris of Pinot Noir, El Novillero Vineyard
The only single-vineyard, single-block rosé in California grown and harvested intentionally for rosé, rather than as a byproduct of red wine production. Sourced from El Novillero Vineyard and made from Pinot Noir picked three and a half weeks early to preserve freshness and finesse.

Vinification: Fruit goes directly to press with no saignée. A gentle champagne-cycle press of 7 to 8 hours, followed by fermentation with 75% in stainless steel and 25% in neutral French oak.
Tasting Notes: A pale salmon-coral hue. The bouquet speaks of rose petals, watermelon, and fresh wild strawberries. Crisp lime citrus balances ripe Crenshaw melon on the mid-palate, with a finish of fresh acidity. Bone-dry and as fresh as a spring day.
Pairing: Spring vegetables, charcuterie, grilled seafood, summer salads, and lighter pasta dishes.
